Restaurant Ava has opened in Rockwall, with a focus on local and American ingredients. Chef and co-owner Randall Copeland, who worked previously at Bolsa, Bradley Ogden in Las Vegas and the Green Room, is keeping it seasonal. Look for dishes such as chilled English pea soup with Maine shrimp ceviche, mint and crème fraîche; pan-roasted Windy Meadows chicken with spring onions, sugar snaps, quinoa and natural jus; and strawberry-rhubarb buckle.
