Tucked behind a Chevron station on Legacy Drive in Plano, Chitos is the kind of place you want in your neighborhood. It's comfortable, it's friendly and it has some of the best tostadas and sopes I've tasted anywhere. The sope bases are not too thick, not too thin; supple and nicely chewy, with good corn flavor, they're just right to support layers of frijoles, shredded lettuce, queso blanco, meat (al pastor was excellent), salsa cruda and queso fresco, in perfect proportions. The chicken tostada, a real bargain at $2.50, makes a terrific light lunch: lettuce, tomatoes, good chicken, crumbly queso fresco and crema atop a crisp fried tortilla spread with frijoles and served with salsa verde. Or go for a super-fresh, tangy ceviche tostada. It's outstanding. Oh, and yes – the tacos are good, too.
Sandra Correa, who previously had run the front of the house at Chitos, recently bought the business with her husband, Gabriel, and she knows how to set the right tone: The table service is cheerful, warm and efficient. It's way above and beyond what you'd expect from a taqueria, even a great one.
The milky, sweet cantaloupe agua fresca, served on ice with diced cantaloupe on top, makes a splendid dessert drink. And the Correas, who are working on getting a liquor license, don't mind if you bring your own beer in the meantime.
