Vidalias offers a fresh perspective in authentic southern cooking, with emphasis on local, in season, fresh ingredients. Chef Farinelli's food is not like anything being done by other local fine-dining chefs, who tend to mine the "cowboy" or Southwestern vein. And we applaud Farinelli's efforts to cook with local and regional products, such as Burgundy Pasture Beef from Grandview, Lucky Layla yogurt from Garland, Veldhuizen cheese from Dublin and stone-ground grits and other products from Homestead Gristmill near Elm Mott.
Kudos, in a word, for Vidalias. It's just the kind of restaurant Fort Worth needs.
