Saint-Emilion owner Bernard Tronche has opened Paco and John Mexican Diner, a casual breakfast and lunch spot in Fort Worth. The diner is a joint venture between Tronche and one of his longtime employees, Francisco Islas. Look for Yucatán-style pork pibil, spicy garlic-marinated shrimp and sautéed calf's liver a la Mexicana.
