The eatery in a northern suburb of Dallas will offer fresh, sustainable
seafood in a casual dining atmosphere set amid original art and prints by
the noted marine wildlife artist, as well as a retail store and gallery
featuring original works by Guy Harvey, signature clothing, and giftware.
A collaboration between Peter McFarland, principal of Florida-based
McFarland Management Company, and Guy Harvey, the Fairview location is the
seventh in the Guy Harvey Island Grill group and will be the first of eight
projected locations in the Lone Star State with others on the drawing board
in Plano, Austin, and Houston.
Well-known in coastal areas, Guy Harvey is an artist, photographer, diver
and scientist whose focus has always been on sustaining the oceans and
marine wildlife. His artwork is featured in galleries, stores and at
fishing tournaments and his conservation efforts to save marine life are
legendary.
Central to all of his culinary concepts and in keeping with his fierce
commitment to conservation, Harvey insists that his restaurants serve only
carefully selected fish that have not been over-exploited. By expanding his
brand throughout the country, Harvey said he "aspires to educate and
increase awareness of conservation both above and below our precious waters.
We can continue fishing without depleting various species of fish for future
generations."
