It's fast-casual, with a mix 'n' match menu. You choose the filling (such as pork carnitas, beef brisket, spinach and mushroom), the tortilla (corn, blue corn, wheat, flour), the cheese (Oaxaca, cheddar, jack, queso fresco) and the sauce (including chipotle crema, avocado verde and oaxaca mole). There are also a handful of special enchiladas, including one filled with quinoa & tofu.
