Though Peggie Sue BBQ just opened for business in 1989, it carries on a fondly remembered tradition of barbeque in the location. For over forty years this was Howard and Peggy's, then Peggy's Beef Bar, before closing in the late 1980s. You can still see the original menu over the windows in the dining room to the right, as well as other decor items from the old restaurant. While the menu has certainly been updated, the place is firmly stuck in the 1950s.
The meats are smoked and the vegetables are prepared daily. The sliced beef on the plated full meal is always and only cut from the totally lean flat portion of the brisket, with all excess fat removed.
No less attention is paid tot he baby back and pork spare ribs. They are hand trimmed, stripped of sinew, and dry rubbed before smoking. The poultry is the best: only large, three pound, fresh chicken and natural breast of turkey is used.
Few places offer such a refreshing and extensive choice of tasty, lightly steamed vegetables. Many a vegetarian has dined with pleasure at Peggy Sue BBQ.
